This Lettuce-Free Salad Is Seriously Incredible

Many times, when my fiancé and I are trying to eat healthy, we do what most people do: eat salads. But I’ll admit, I don’t have a high tolerance for eating a lot of salads—I get bored with them easily. Since most salads are lettuce-based, I’ve come to enjoy this non-lettuce salad as something different, yet still healthy. Bonus! It has olives, which, in my opinion, are its best feature.

Oh, did I forget to mention that this is the easiest salad in the world? It’s only two steps!

A Lettuce-Free Salad

Serves: 6-8 as an appetizer or side salad


  • 2 cucumbers
  • 1 large tomato
  • 1 small onion
  • 1/2 cup green olives
  • 1/2 tbsp oregano
  • 1/2 cup zesty Italian dressing of your choice

  • Serving Size: 1 1/2 cup


1. Chop up the cucumbers, tomato and onion. Cut them into large, but still bite-sized pieces—no need to dice them super small. Toss them into a bowl and add the green olives and oregano.

2. Stir the salad to evenly mix all ingredients and top with 1/2 cup zesty Italian dressing of your choice. Stir again to make sure salad is evenly dressed.

*Note: For an extra healthy option, you can simply top the salad with a light oil and vinegar dressing.

That’s it, folks! This salad is easy, but tastes so fresh and unique. It’s great to make for a big party, and an easy one for guests to serve themselves.
