In this episode of The Brekkie Series, Kara Elise shares her super simple but incredibly delicious recipe for overnight oats.
These overnight oats can be easily prepared in advance and made even more tasty with creative and healthy toppings. Even better? This recipe isn’t just for adults: it’s great for children of all ages. Maybe even a perfect way for parents to sneak in those fresh fruits at breakfast, but you didn’t hear it from us!
1/3 cup plain yogurt
1/2 cup rolled oats
2/3 cup unsweetened milk of your choice
1 Tbsp. chia seeds or ground flaxmeal
1/2 tsp. vanilla extract
a pinch of salt
2 Tbsp. honey or maple syrup
Apple Pie topping:
pinch of cinnamon
Banana Nut topping:
slices of banana
Berries + Banana topping:
Chocolate Coconut topping:
1/2 Tbsp. cocoa powder
To make the oats, combine 1/3 cup of plain yogurt, 1/2 cup of rolled oats, 2/3 cup of unsweetened milk of your choice and 1 tablespoon of chia seeds or ground flaxmeal into a cup or jar of choice.
Add 1/2 teaspoon of vanilla extract and a pinch of salt.
Add up to 2 tablespoons of honey or maple syrup, depending on sweetness desired.
Store in the refrigerator overnight.
Apple Pie: add slices of apples, chopped pecans, a pinch of cinnamon and drizzle with caramel.
Banana Nut: add slices of banana, sprinkled cinnamon, a dash of nutmeg and finish with chopped walnuts.
Berries + Banana: add mixed berries and banana slices, then sprinkle with hemp seeds.
Chocolate Coconut: stir in a 1/2 tsp. of cocoa powder, add shredded coconut and finish with cacao nibs.
