Uncomplicate family meal time with a simple and scrumptious salmon dinner. Beau Coffron shares his secret for a quick meal to foster family togetherness.

Usually, on Dad Does Lunch, Beau Coffron, our resident lunchbox connoisseur, shows you how to send your child off with a creative, unique lunch that never disappoints. Today, he’s switching it up a bit and taking on a different meal: salmon dinner!

We love lunch as much as the next person, but there’s something about a family dinner around the table where each person can share about the ups and the downs of their day. Sometimes, after a long day, the idea of cooking a full-on dinner can seem a bit overwhelming, but Beau’s got the perfect recipe to take the stress off of you and bring the family together.

You won’t even have to fish for compliments; this salmon dinner is just that good!

You’ll Need:

  • 1 baguette
  • butter
  • parmesan cheese
  • foil
  • baking sheet
  • asparagus
  • all spice
  • salmon
  • lemon pepper
  • olive oil

Directions:

  1. Preheat your oven to 425 degrees F.
  2. Slice a baguette down the middle, butter the inside and cover with parmesan cheese.
  3. Press the baguette back together and wrap in foil.
  4. Cover a baking sheet with foil, using a bit of extra foil to form a wall down the middle of the baking sheet.
  5. On one side of the baking sheet, place cut and washed asparagus.
  6. Sprinkle with your favorite all spice.
  7. Place your salmon on the other side of the baking sheet.
  8. Season with lemon pepper as desired.
  9. Drizzle olive oil on top of your salmon and asparagus.
  10. Place the bread, asparagus and salmon in the oven for 12-14 minutes.
  11. When it’s finished baking, plate the meal and serve!
