Lucky for us, Kara Elise is back with the latest episode of The Brekkie Series to share her recipe for the tastiest, sunny-side-up breakfast sandwich. What’s better than the classic eggs and bacon, but with a cheesy, sandwich-y twist?

Follow Kara’s simple instructions and indulge in a delicious morning meal. Whether you like your egg yolk runny or cooked all the way through and your bacon crispy or soft, this breakfast sandwich is for anyone.

You’ll Need:
  • 3 strips of bacon
  • 1 English muffin
  • 1 slice of cheese
  • 1 egg
  • condiment of choice
Directions:
  1. Cook the bacon strips in a frying pan until they reach the desired crispiness.
  2. Set bacon aside on a plate.
  3. Slice your English muffin in half and place the slice of cheese on one-half of the muffin.
  4. Put the English muffin on a tray and insert into a toaster oven to toast the muffin and melt the cheese.
  5. Once the cheese is melted, remove from the oven when finished and set aside.
  6. In the same pan that you cooked the bacon strips, fry your egg to give it more flavor.
  7. Fry your egg to personal preference. (Kara fries her egg over-medium to keep the yolk a little bit runny.)
  8. When finished, add the egg on the side of the English muffin with the melted cheese.
  9. Top with bacon.
  10. On the plain side of the muffin, spread on condiment of choice. (Kara uses pesto.)
