Life as a new mom is wild! Natasha and Julianna assemble the perfect gift to help. Eight hours of sleep is hard to wrap, so it's burritos instead.


First comes baby, then comes joy, then comes the meal-planning committee to make sure mom has her meals too!

In this episode of Giftable, friends and gift-whisperers Julianna and Natasha offer up the perfect “bundle” for a new mom: homemade, frozen veggie burritos. They definitely take the cake – err, guac – when it comes to welcoming a little one home.

Chile Relleno Burritos (Makes 4)

 Making the burritos, You’ll Need:
  • 3 pattypan squash
  • 4 poblano peppers
  • 4 slices of 3 oz. goat cheese
  • pico de gallo
  • 1 bunch cilantro
  • 1 can refried beans
  • 1 avocado
  • 1 bunch of roasted kale
  • 4 tortillas
Directions:
  1. Slice the poblanos and pattypan squash and arrange on a baking tray.
  2. Broil for 15 minutes and cool.
  3. Peel the poblanos and stuff each with goat cheese.
  4. Roast poblanos for 5 minutes at 350 degrees F.
  5. Assemble each burrito by layering one poblano with the avocado, kale, squash, beans and cilantro.
  6. Roll up, wrap in plastic and freeze.
  7. Repeat for remaining ingredients.

 


Assembling the gift, You’ll Need:
  • craft paper or tissue paper
  • two-toned green ribbon
  • straw grass
  • gift tags
  • tape
  • scissors
  • lime soda bottles
  • basket
  • encouraging card or book
Directions:
  1. Wrap each burrito in paper and tie with tag and string.
  2. Assemble basket with grass, wrapped burritos, sodas and card.
