Today on Dad Does Lunch, we learn a valuable lesson in versatility: our resident lunchbox connoisseur, Beau Coffron, teaches us that the waffle iron is not just an appliance to be used for breakfast. It turns out we’ve been limiting it all this time!

But not to worry, Beau’s showing us step-by-step instructions for a meal that’s perfect for the lunch box or the dinner plate. And it involves one of our favorite things: pizza! Check out the video above to have your expectations of the waffle iron blown away and a smile brought to your kids’ face with this innovative meal.

You’ll Need:
  • pre-made pizza dough
  • cutting board
  • your favorite pizza toppings
  • waffle iron
  • bowl of pizza sauce
Directions:
  1. Roll out your favorite pre-made pizza dough onto a cutting board or flat surface.
  2. Cut the dough into 4-6 pieces.
  3. Fill the pizza pockets with your favorite toppings. Make sure to use plenty of cheese, but save the sauce for later.
  4. Once all the toppings are added, cover and seal the pizza pocket with another piece of dough.
  5. Roll the sides shut, pinching the dough together to close it tightly.
  6. Place your pizza pocket on a pre-heated waffle iron.
  7. Close the waffle iron and cook for 7-8 minutes.
  8. Once browned, remove the pizza pocket from the waffle iron, place on a plate and cut it open.
  9. Cut into pieces, if desired, and dip into a bowl of pizza sauce.
